Yellow
Jan 22
When I was a kid, if you were to ask me what my favorite color was, I assure you that yellow probably would have been toward the bottom of the list. Enter the year 2010 and my sister asked me to wear a yellow dress in her wedding. I told her that I do not look good in yellow, (the one yellow top I have ever owned made my teeth look yellow-er. Gross.) but I would absolutely wear whatever she wanted. This was just the push I needed to get on the yellow bandwagon. There are some nice things that are yellow. The sun. The song by Coldplay. Flowers. And lemons. Enter one of the most delightful desserts I’ve ever made, and I’ve made a lot: Lemon-Coconut Bars.
I used this recipe, but I’d like to try this one, as well. These bars seem like a spring or summer dessert, but you can get lemons year-round. And it’s been such a mild winter around here that it feels like spring anyway.
I would not have ever thought to pair lemon and coconut, but if you enjoy those two flavors, the combination is delicious. Trust me on this one.

Is that tonight’s dessert? I hope so!!
Mmmmm. That sounds delightful! It’s warm outside so that’s close enough to summer.
We just finished up the pieces you gave us and I was thinking that I really need to get the recipe from you so this post makes me happy…it IS sooooo good!
Lemon and coconut in the same dessert? I’m sold!!
That’s funny about your sister’s wedding and wearing yellow. As her maid of honor, my sister had me wear yellow in her wedding years ago, it was 1975 in fact. I think I look (and did look!) awful in yellow, too, and I still bring it up to her. I never have worn it since. But yes, your right, it is pretty in the world around me, just not on me.
These recipes look wonderful. I love lemon and coconut, too.
