Candy Canes

Every Christmas season, candy canes appear in our house. Our children come home with them from church, school, and their grandparent’s homes and then beg to eat one every day. We oblige some of the time, but I don’t give a second thought to candy canes with all of the other goodies we have around at Christmastime, even though they are one of the four main food groups (for elves). Name that movie.

Fast forward to January or February when I typically throw candy canes away since peppermint is so last season. But this year, only a few of our leftover candy canes will meet their demise since I made a dessert that uses…yep, you guessed it! Candy canes!

Even better, this dessert has the word “delight” in it, which automatically makes it a winner in my book. Here ya’ go:

Chocolate-Peppermint Striped Delight

Some tips for this recipe:

*I would make this the same day you plan to serve it. As with most recipes involving pudding, some separation occurs and the crust gets a little soggy.

*The crushed candy canes that go on top will absorb quickly into the whipped topping and turn it pink, so don’t get all hasty and forget the part about topping with coarsely crushed candy canes just before serving. Someone I know did that.

*Don’t be dyslexic and read 54 Nilla Wafers instead of 45, thus causing the crust to be less crust-like and more dump some crumbs in the bottom of the pan-like. Someone I know did that, too.

*I think an Oreo crust would be delicious as well.

  2. Elves? I’m terrible at movies, but the Chocolate-Peppermint Striped Delight looks delightfully delicious.
